Using the analysis genome of Black Aspergillus Awamori results perform a detailed comparison of the flavor Awamori. From there results we developed technology that enables to have the better Awamori products.

The new technology in brewing Awamori was establised, which found on analysis of the influence flavor Awamori products with difference rices materials. The technology using in this study are compared with previous reports and we hope it will contribute in the technology of brewing Awamori.
